Cake recipes
My favorite white cake recipe: from "Food and Wine"
--makes 8~10 servings--
2 cups all-purpose flour
2 t baking powder
1/4 t salt
6 large egg whites, at room temperature
3/4 cup milk
2 t pure vanilla extract
1 1/2 stick (12 T) unsalted butter, softened
1 1/2 cups sugar
* Preheat the oven to 350 degrees. Butter two 9 x 1 1/2" round cake pans.
* Line the bottoms with parchment or wax paper.
* In a medium bowl, stir together the flour, baking powder and salt. In another bowl, beat the eggs whites, milk and vanilla just to combine.
* In a large bowl, using an electric mixer, beat the butter and sugar at medium speed until light and fluffy.
* At low speed, beat in the dry ingredients alternately with the egg white mixture in 4 parts, beginning and ending with the dry ingredients.
* Stop to scrape the bowl and beaters with a rubber spatula after each addition.
* Pour the batter into the prepared pans and smooth with a spatula.
* Bake in the middle of the oven for 25 to 30 minutes, or until a cake tester inserted in the center comes out clean.
* Transfer the pans to a rack to cool for 5 minutes, then invert the cakes onto the rack, peel off the parchment paper and let cool completely.
