Mixed Fruit Clafoutis

Nonstick spray coating
1 cup milk
3/4 cup all-purpose flour
1/2 cup egg
1/3~1/2 sugar
2 T cooking oil
1 t vanilla
1/4 t almond extract
2 medium plums, pitted and sliced
2 medium peeled peaches or nectarines,
pitted and sliced
1 cup sweet cherries, halved and pitted
1 T powdered sugar

* Spray a 9" pie plate or six 5" quiche dishes or six 10oz custard cups with nonstick coating; set aside.
* In a small mixing bowl combine skim milk, flour, egg product, sugar, cooking oil, vanilla, and almond extract.
* Using an electric mixer on low speed or a rotary beater beat till smooth.
* Arrange plums, peaches or nectarines, and cherries in prepared pie plate, quiche dishes, or custard cups.
* Pour batter over fruit.
* Bake in 375 oven for 40 minutes or till puffy and lightly browned.
* Sift powdered sugar over top. Serve warm.
